Walking up CMH road, Indira Nagar, it is easy to miss the tiny momo outlets tucked away from the main road. Often made up of just a foldable table and a steaming vessel, these local haunts offer respite from cold evenings, hunger and a stressful day. Here, momos are served hot from the steaming vessel, accompanied by the trademark red chilli sauce.

One of these stalls is run by the sharp, friendly Shubas. In a conversation, Shubas revealed that he was from Darjeeling. He had moved to Bengaluru with his brother in 1991, in search of work. After a series of odd jobs, he opened his momo stall along CMH Road in 2005. His location has remained unchanged for 15 years.

He runs the business with the help of his brother, who makes the momos during the day. Shubas sells these momos in the evening, from around 5 till 8.30 or 9. “There is no wastage,” he says, “All the momos are sold out”. The momos are reasonably priced – veg momos at Rs 50 a plate, and chicken momos at Rs 60 a plate. The chicken momos are more popular, says Shubas.

Outsider/insider?

A large proportion of the city’s small momo outlets are run by those hailing from Northeastern states . Throughout our conversation, Subhas kept emphasising that he was Indian. He told me that most momo sellers in the city were from the Northeast and not Nepal. Clearly, he did not want to be mistaken for a Nepali. Referring to many people from the Northeast selling momos in Bengaluru, he emphasised, “Poorah India yahaan hai” (All of India is here).

That Shubas thought he needed to prove his Indian-ness to me, a complete stranger, was worrying, and spoke volumes on the discrimination many like him face from the “mainlanders”. However, not all momo sellers perceived such exclusion. Most had little trouble in the city when it came to people. “Of course,” says Rohini, another stall owner, “There are always issues with the police. Every now and then a Rs 1000 hafta (protection money) needs to be paid.”

Rohini has a husband and child back home, as well as aging parents she has to provide for. “Paisa thoda tight ho gaya,” she explains her reason for coming to Bengaluru. She had set up her stall in 2013, and sells bread omelettes apart from momos.

Momo prices doubled in 15 years, so has competition

Shubas says the demand for his momos has been nearly the same since 2005, indicating this dish has been a favourite among Bengalureans for long. Only, now there are a lot more outlets, and hence more competition for early birds like him. Just within a 600 m radius of his stall are two other stalls, both set up 5-6 years ago.

Momo prices have doubled since Shubas got here. In 2005, he used to charge just Rs 25 for a plate of veg momos and Rs 30 for a plate of chicken momos. However, competition has led him to increase the portion size – from six pieces per plate in 2005, to eight pieces today.

Is it lucrative to run a momo stall? 

In a conversation with Dike, another momo seller, I was able to get a rough idea of whether this business was lucrative enough.

Following were the daily expenses of running a momo stall pre-COVID (there have been major fluctuations in the business since COVID):

From the Rs 6000-9000 she eventually makes in a month, Dike has to send money back home for her child as well as for her own and her husband’s families. With ageing parents who can’t work, her expenses are only set to increase. Sometimes she’s unable to meet her child’s expenses.

With COVID, life has come difficult for Dike, as is the case with vendors across Bengaluru. During lockdown, she stayed put in the city. She and her husband lived off their savings while her sister covered the rent. Since her family back home received government rations, they had no significant expenses.

Post lockdown, she had resumed business around the second week of June. The price of chicken had gone up then, and so did her daily costs. This, along with the drop in customer numbers steeply reduced her daily profits. She now opens her stall at 3.30 in the afternoon to make up for lost sales, and hopes that business will be back to normal soon.

When I asked her what the future holds, Dike smiles and says she doesn’t know. For people living paycheck to paycheck, it is sometimes dangerous to dream.

Sagar Daryani and Binod Kumar started the Momo business in 2008.

Who could have ever thought that by just selling momos, one could make as much as Rs 6 lakhs every day? Meet Sagar Daryani, a Kolkata-based businessman who transformed a simple momo stall into a whopping business. The company’s annual turnover is Rs. 2,130 crore. Sagar Daryani along with his co-founder Binod Kumar embarked on this grand journey from a humble beginning.

At the initial stage, their path was filled with challenges. Sagar’s parents envisioned a different future for him, asking him to pursue further education and build a conventional career. While completing his studies at St. Xavier’s College, Sagar’s decision to venture into selling momos wasn’t met with immediate acceptance from his parents.

Nevertheless, he persisted and transformed his modest idea into a thriving reality.

Sagar during late-night study sessions with Binod often ordered fast food like pizzas and burgers from nearby eatery joints. It was during this time that they realised the untapped potential in the momos sector.

With a modest savings of Rs. 30,000, the duo took the big step of launching their first momo shop in 2008. With just one table and two chefs, they boarded on their entrepreneurial journey and rest is history.

The initial two years were filled with challenges and struggles due to fund crunch. For marketing and advertising, Sagar used to wear Wow Momo t-shirts, turning himself into a walking advertisement. Going the extra mile, he started innovating with momo recipes to further expand his customer base.

After the small momo stall achieved success, Sagar and Binod adopted the franchise model, opening numerous additional stores. With a total valuation of Rs 2,130 crore, their journey is nothing but an inspiration for the budding entrepreneurs.

In the year 2023 alone, their company’s revenue grew from Rs 222 crore to an impressive Rs. 400 crore. At present, their business empire encompasses around 800 points of sale.

With 274 kiosks, small and medium size outlets and big eating joints spread over 13 Indian cities that employ 2,200 people, their projected turnover by the current fiscal end would be around Rs 200 crore.

Daryani and Homagai now plan to come up with fully automated machines to prepare their delicacy, which would tumble out of conveyor belts beyond Indian shores.

That, in short, is the fascinating tale of the humble past, present growth and likely technology-driven future of the quick service restaurant chain Wow! Momo.

Headquartered at Jadavpur, where it all started in 2008 with a kitchen, two cooks and a table, Wow Momo Foods Private Limited today fully owns and operates 271 outlets. The rest three in Kerala are franchises.

“We were both greenhorns in business, though Sagar’s father had a shop. We were final year B.Com students. Before the results were out, we had launched our business. We thought it was worth taking the risk. If it doesn’t work, we’d go for jobs,” 34-year-old Homagai, the company’s Chief Operating Officer, told IANS.

“I’m a Nepali, we make momos at home. So we thought of this food because we could see the culture of momos developing in Kolkata,” he added.

The first store opened in Gachhtala area of Tollygunge in Spencer’s Retail hypermarket, where the momos were supplied from the base kitchen in Jadavpur.

Sales touched Rs 2,000 a day. While Homagai managed the store, with two part-time chefs, Daryani stood outside, distributing leaflets, talking to the customers, giving them free samples.

“We ran an offer every 15 days — buy three, get one free. The offer boosted the sales by 45 to 50 per cent, thereby covering the salaries of the two chefs,” he said.

Impressed with their success, the hypermarket chain gave them another store. And very soon they got a third one in the swanky South City Mall, “which made us a brand”.

“The part-time cooks now became full-time. And we also started hiring front end staff,” he said.

From then on, there was no looking back. They were opening a store every month, and the speed accelerated as time went by. In 2011, Daryani and Homagai decided to expand beyond Kolkata, by setting up a store in Bengaluru.

Till 2015, they had 44 stores and the only bank loan was of Rs 25 lakh. But that year, they roped in IAN, world’s leading horizontal seed stage platform, to invest Rs 10 crore. “With that money we started building a good management team.”

Homagai was candid enough to admit neither he, nor Daryani — the company Chief Executive Officer, had visualised in the early stages that their business would reach such levels so soon. On the contrary, they had to surmount hurdles every now and then.

“First, if your brand is not established, people don’t want to come and work with you because they feel the future is uncertain. Then there were a lot of licencing and government policy issues. In every department we had to fight, and we learnt things the hard way,” he said.

They also struggled in innovating and experimenting with new products, while having to take a call on the stalls in some locations not doing good business.

However, the biggest challenge came in 2011 when the Pollution Control Board closed down the Jadavpur unit as the company didn’t have a pollution licence.

“But we didn’t close down. We took a house on the Eastern Metropolitan Bypass. For at least three months our office was shifted there. We fought. We got the licence, and started again in Jadavpur,” said Homagai.

Through the tough times, the partners’ key drivers were passion and the mental strength “not to leave anything easily and go all out in our fight to make it a success.”

The West Bengal capital still continues to be the hub of their business, with over 100 stores, including around 15 in the Kolkata Metro stations.

Asked about the employment they have generated, he said: “We have 2,200 people working on payroll. Plus there are 700 vendors.”

But what next? Do they have plans to become a listed company?

Homagai answered in the affirmative. “We’ll close 2019-20 with near about Rs 200 crore. We have a five-year target to ramp up our turnover to Rs 1,000 crore. Once that happens, may be in six-seven years, we may opt for the IPO route.”

As for carrying their footprint abroad, the company was talking to international franchises, in Bangladesh, Dubai in United Arab Emirates and some European nations.

But before venturing overseas, they want to make their company more technology-driven.

“We have our research and development team, which prepares the recipes that are followed in the kitchen. That has also helped in maintaining the product quality and standardisation.

“We use manual machines which do everything except folding of the momos. In one or two years, folding also can be done through machines. Also in the next couple of years, we may have automated machines with conveyor belts from which momos will be coming out,” said Homagai.

“If you go to foreign countries where labour cost is very high, if everything comes out of a machine, it will be easier,” he added.

The company’s R&D team is also working on preparing momos with a shelf-life of 90 days. As for product innovation, the company has come up with 14 varieties of momos, which Homagai calls “Indianisation of the Tibetan momos”.

“We have burger momos, dessert momos, chocolcate momos, and even chicken and cheese momo, which will melt in your mouth,” he added.

Although it all started with simpler versions of the dish, just boiled momos with different fillings inside, soon the tide took a sharp turn and stall owners introduced bizarre versions of the classic steamed delicacies.

There’s the malai version, the tandoori version, the fried version, and even the chocolate version. Whatever you can imagine, there’s sure to be a place selling it. Well, all this talk of momo stalls makes one wonder about the logistics behind setting up such a stall and even makes people curious about the profits these owners are making working from the streets of  Delhi .

A curious content creator and YouTuber, Aradhana Chatterjee, got intrigued by this form of business. So, to quench her curiosity, she approached a street-side momo-wala.  She talked to a momo stall owner who has been in the business for nearly 21 years.

He explained, “I get 300-400 customers every day. An average customer spends around Rs 40 to Rs 60 on the stall. I keep my stall open for the whole of the week and earn Rs 10 for a plate I sell for Rs 50. So, my profits are around 20% of my sales.”

The Monthly Profit Calculation Surprised People On The Internet

Calculating his daily earnings from the information the momo stall owner gave, Chatterjee concluded, “With a profit margin of 20%, he makes around Rs 3,500 out of his total sale of Rs 17,500. That amounts to Rs 1,05,000 a month, which is far above than the average earning Indian who earns above Rs 32,000 a month.”

Hearing these calculations, folks on the internet were pretty sure they would much rather open a momo stall than drag their feet at work. Even though the creator did not specify the hidden costs of fuel, electricity, and such, the calculations still blew people’s minds. One user declared, “Ab toh momo hi bechna hain bhai.”

While one cared less about the profit than the momos themselves, “Nice close-ups … now I wanna eat some momos as well.”

The Frog In A Milk Pail

A frog was hopping around a farmyard, when it decided to investigate the barn. Being somewhat careless, and maybe a little too curious, he ended up falling into a pail half-filled with fresh milk.

As he swam about attempting to reach the top of the pail, he found that the sides of the pail were too high and steep to reach. He tried to stretch his back legs to push off the bottom of the pail but found it too deep. But this frog was determined not to give up, and he continued to struggle.

The carpenter said, "I think I understand the situation. Show me the nails and the post-hole digger and I'll be able to do a job that pleases you."

The older brother had to go to town for supplies, so he helped the carpenter get the materials ready and then he was off for the day.

The carpenter worked hard all that day measuring, sawing, nailing.

About sunset when the farmer returned, the carpenter had just finished his job. The farmer's eyes opened wide, his jaw dropped.

There was no fence there at all. It was a bridge... a bridge stretching from one side of the creek to the other! A fine piece of work handrails and all - and the neighbor, his younger brother, was coming across, his hand outstretched.

"You are quite a fellow to build this bridge after all I've said and done."

The two brothers stood at each end of the bridge, and then they met in the middle, taking each other's hand. They turned to see the carpenter hoist his toolbox on his shoulder. "No, wait! Stay a few days. I've a lot of other projects for you," said the older brother.

"I'd love to stay on," the carpenter said, "but, I have many more bridges to build."

There’s the malai version, the tandoori version, the fried version, and even the chocolate version. Whatever you can imagine, there’s sure to be a place selling it. Well, all this talk of momo stalls makes one wonder about the logistics behind setting up such a stall and even makes people curious about the profits these owners are making working from the streets of  Delhi .

A curious content creator and YouTuber, Aradhana Chatterjee, got intrigued by this form of business. So, to quench her curiosity, she approached a street-side momo-wala.  She talked to a momo stall owner who has been in the business for nearly 21 years.

He explained, “I get 300-400 customers every day. An average customer spends around Rs 40 to Rs 60 on the stall. I keep my stall open for the whole of the week and earn Rs 10 for a plate I sell for Rs 50. So, my profits are around 20% of my sales.”

Calculating his daily earnings from the information the momo stall owner gave, Chatterjee concluded, “With a profit margin of 20%, he makes around Rs 3,500 out of his total sale of Rs 17,500. That amounts to Rs 1,05,000 a month, which is far above than the average earning Indian who earns above Rs 32,000 a month.”

Hearing these calculations, folks on the internet were pretty sure they would much rather open a momo stall than drag their feet at work.
