The number of people who cook at home is growing, as is the need for food. Restaurants, caterers, food product manufacturers, and meal delivery services have all worked extra hours to ensure that customers and communities are supplied during this tough time. During a pandemic, some people and families come up with the idea of launching a business to cope with the crisis’ impact on their lives. After the pandemic disrupted their work and rendered them jobless, this was also becoming their way of obtaining financial help or a source of income.

A 17-year-old Filipino teen from Mendez Cavite. His dream was to own a high-end laptop or personal computer, but his mother couldn’t afford one, and it became a point of contention between him and his mother. He needs the device to complete his modules. The laptop he needs is the high quality one, but his mother indulges in the laptop which costs 10,000 pesos which his mother would save anyway.

Josh started to plan and have an idea in selling kangkong chips in May 2021, the month of his grandfather’s birthday. The kangkong chips recipe was his Auntie’s recipe that was made for his grandfather. He started selling on Facebook and gained one loyal customer and just like other teenagers, Josh was distracted by video games which made him stop. Suddenly, his grandfather died in June of the same year and that’s when he pursues and pushes again selling kangkong chips with the capital of P3,000 only which is also his way to help his parents financially.  He’ll never forget what his grandfather told him before he died “life isn’t simple, so don’t set your goals too low”.  He asked his Auntie to teach him how to cook kangkong chips and he asked help from his mother to handle the finances since he was underage. From dipping the kangkong to frying and packing, he handled everything himself. The initial packaging of his Kangkong chips was in small boxes meant for rice meals. He also contacted public vendors to be their source of ingredients, especially the Kangkong to help them. He soon realized that he has a product that has the potential to go big. At 6 am, he will wake up just to prepare orders since his products became the trend and gave satisfaction to the customers that made them order again.

As time passed, the demand for kangkong chips grew, and Josh realized that he couldn’t handle all of the work alone any longer, so he enlisted the help of his cousin, who agreed to work as one of his employees.  However, the task will not be simple for the two of them. He employed ten of his friends, all of whom were still in school so that they could earn money even if there was a pandemic. Even with a full load of work, Josh never forgets to study. He manages his time, in the afternoon he will help in the production, and then when the evening came, he will start answering his modules. He was now studying at Saint Augustine School-Mendez as a Senior high school student.

Josh earns P165K to P220K each month selling a thousand five hundred to two thousand bags of Kangkong Chips that cost one hundred ten pesos on Shopee and Facebook.  He had his own kitchen where he made the Kangkong chips, and he plans to open pop-up stores in malls to inspire and motivate other teenagers like him to start their own businesses and for those who want to help their families.  Josh has resellers in Cavite and Pasay, and Kangkong chips can be found all over the Philippines, as well as in the United States and Canada.

Sen. Panfilo “Ping” Lacson, a presidential candidate, ordered in bulk from Mojica and praised him on social media for his dedication at such a young age. Sen. Ping Lacson ordered Crispy Kangkong chips from Josh to be part of their Christmas gift-basket giveaways and said that he was proud of Josh even he doesn’t know him. Josh didn’t know at first that Lacson’s office was the one that ordered four hundred bags of kangkong chips and he just realized it when one of the senator’s personnel told him during the delivery.

And, like other entrepreneurs, Josh faced challenges, but he overcame them all with perseverance and dedication. He shared a lot of inspirational sayings that will help teens and entrepreneurs just like him. The first is that you will learn from every failure that you did. The second is, to go quickly, the hope of having a stable life is in your hands. He said that even he is young, he strives for stability and he thinks that should be the mindset of the youth. Move fast, especially in business. Then lastly, he said that if you’ve thought of a plan, don’t sleep until you have executed it. You have to be aware of what you know and what you don’t know and focus on being good. Whatever you do, do it well. Treat everything with excellence and watch how your life changes. He also believes that his business keeps on thriving was because of the guidance of his grandfather.

So who knew that the humble water spinach, i.e., kangkong , a favorite ingredient to our sinigang , can be a much-loved, delicious and healthy munch that’s also easy on the budget? One of the country’s young, innovative Filipino entrepreneurs made it happen.

How the business started

President and CEO, Frank Gaw , had the idea when he was eating crispy kangkong in a restaurant. Yes, it wasn’t a new concept, but he saw its potential as a kiosk snack by adding his own twist to the product.

It wasn’t an easy venture, introducing the product to a discriminating snack-bingeing market was one. Another was it took some time to perfect the crispiness and level of oiliness of the product. But Frank persisted and soon the KangKong King brand was launched.

The novelty of the product contributed to its success. Frank and his partners were surprised that many people haven’t tried crispy kangkong . “The concept was new to a good number of people, and for the rest who have tried them, it brought back fond childhood memories of snacking on them.

KangKong King currently offers five delicious flavors: their bestsellers KKK and BBQ, sour cream, cheese and plain.  Customers can also choose from four sizes (Tarsier, Chimpanzee, Orangutan and Ape) and different flavor levels.

It’s hard not to come back for more because the crispy kangkong chips are low-fat, low-calorie and vegan-friendly.  The snack brand offers a healthier alternative to high-sodium supermarket chips.

Nurturing a Community

Frank has built a unique, all-Filipino enterprise. “Our business created a new demand for kangkong, which allowed us to nurture direct relationships with farmers and local suppliers,” Frank says.

It was also an opportunity to help the local economy and create jobs, “We strongly believe that we only rise by raising others.”

But as with everyone else, the pandemic took a toll on the business as they had to temporarily close all branches due to the lockdowns.

On the brighter side, it also paved the way for Frank and his team to fast track their initial plans of developing the kangkong chips into packed/sealed products, and allowed them to continue delivering to customers amid the on-and-off community quarantine.

Crispy Kangkong also known as Kangkong Chips, is a quick and easy vegetable recipe that is made with water spinach leaves dipped in egg and flour batter then deep-fried until crispy. It is best served with a delicious dipping sauce and enjoyed as a snack or appetizer.

Kangkong (Water Spinach) is a semi-aquatic, tropical plant grown as a vegetable for its tender shoots. It is also known as kangkung, Chinese spinach, kankun, river spinach, and swamp cabbage.

It has a mild taste and can easily absorb other flavors which makes it a favorite addition to some delicious Filipino dishes and popular in most Southeast Asian cuisine.   • ice-cold colorless soda 
  • all-purpose flour
  • ground white pepper
  • cayenne pepper
  • kangkong leaves
  • vegetable oil

In a large bowl, add cornstarch, cold soda, flour, beaten egg, salt, ground white pepper, and cayenne pepper, and mix until thoroughly combined. Dip the kangkong leaves & stems in the flour mixture:

Then fry the stems and leaves until crisp in hot oil. Transfer to a serving plate with your choice of dipping sauce:

  • Storage: Place the kangkong crisp in resealable bags that can last for up to 3 months.
  • If you want some cheesy goodness, add your favorite meltable cheese immediately after cooking for a gooey, delicious bite.
  • Feel free to use spinach or kamote leaves as an alternative to kangkong leaves. (Just make sure to use real leaves, frozen don't work too well.
  • You may dip the crispy kangkong in mayonnaise, ranch dressing, vinegar, or any sauce of your choice.

Use ice-cold water or colorless soda when making the kangkong chips batter then shock the cold batter in hot oil for a good crispy batter to form.

We all need something to eat whenever we’re at home either chilling, maybe watching a Netflix movie, or just scrolling through the feed, right? And it shouldn’t always be chips from the grocery that are undoubtedly bad for your health, especially if it’s consumed excessively. So, what is something that we can make to satisfy our cravings for chips? Well, we could make some banana chips, camote chips, or maybe mushroom chips, too! But have you ever heard of Kangkong Chips? 

Yup! That’s right, we can also make some delicious chips out of Kangkong or Water Spinach! Kangkong is a very abundant vegetable in the Philippines and it is usually used as an ingredient for many classic Filipino dishes such as Sinigang, Adobo, and even Ginataan. But for today, let me introduce to you a new and trending recipe that revolutionized the use of Kangkong that will absolutely become one of your all-time favorite snacks in no time! 

Are you ready? Today, Panlasang Pinoy Recipes will teach us how to make our own version of their Kangkong Chips Recipe at home! 

Alright, let’s do this! Everything that we need for this recipe can be easily bought from the local markets and grocery stores so you don’t have to worry about the availability of the ingredients. Oh, and some people, especially plantitos and plantitas, may have already planted their own Kangkong at home! And finally, the cooking procedures for this recipe are very easy to follow so I’m highly confident that you’ll be able to master this in no time! 

Before we begin, let me first list down all of the ingredients we need! Of course, we’ll be needing Kangkong leaves, egg, oil, water, salt, flour, and cornstarch. Don’t forget to add the flour and cornstarch, okay? We’ll be needing both of them for our batter mix. 

Now that we’ve got everything that we need for our recipe today, let’s start! The first thing that we need to do is to wash the Kangkong leaves properly and thoroughly. Make sure to remove all the extra dirt and debris from the leaves. Also, detach the leaves from the stem of the Kangkong because we won’t be needing them. Once you’re done cleaning and preparing the Kangkong leaves, set them aside for a while because, in the meantime, we’ll be making the batter mixture! 

For the batter mixture, simply combine the cornstarch, flour, egg, salt, and water in a clean mixing bowl. Keep on mixing all of the ingredients well until the consistency becomes smooth and perfect for a batter mix. Alright! Now that everything’s ready, it’s frying time! First, heat the oil on the pan and then gradually adjust the flame to medium. Next, dip the Kangkong leaves into the batter mixture that we made and then deep fry them until crispy. Keep on doing this in batches until you cook all of the kangkong leaves. Then, voila! 

You already cooked another delicious snack that’s perfect for all kinds of occasions! It’s better to serve these bad boys while they’re hot. Oh, and you can also add whatever dipping sauce that you like whether it’s ketchup-mayo, hot sauce, or even honey mustard!

Ingredients   

  • 4 bunches of kangkong leaves cleaned
  • 3 cups cornstarch
  • 1 cup flour
  • 1 pc egg
  • 1-1/2 cup water
  • 5 cups cooking oil for deep frying

Instructions  

  • Clean kangkong thoroughly.
  • Remove leaves from stem. Set aside.
  • For the batter, combine cornstarch, flour, egg, salt and water
  • in a clean mixing bowl.
  • Mix until the consistency is smooth.
  • Heat oil and reduce fire to medium.
  • Dip kangkong leaves in batter and deep fry until crispy.
  • Drain oil from kangkong leaves then serve.
